Create a new winemaking in WineOS

Every wine in WineOS lives inside a winemaking: the production folder that holds its intakes, its pressing, its LOTs, its operations, additions, analyses, bottling and cellar book. Getting this one record right at the start is what makes the rest of the harvest readable. This guide shows how a winery creates a winemaking and attaches the grapes that belong to it.

What you will do

Create a winemaking with its name, harvest year and wine classification, allocate the kilos of specific grape deliveries to it, and get oriented in the tabs you will use for the rest of the season.

Steps

1. Make sure an active harvest campaign exists. Every winemaking belongs to a campaign, and WineOS blocks the creation until one is available.
2. Open Production → Winemaking and click New winemaking.
3. Choose the kind: a normal (primary) winemaking, or a blend winemaking for a folder that will only receive wine from other batches. This choice is made once and is not editable later.
4. Enter the winemaking name — the name your team actually uses, for example Sauvignon Blanc PGI 2026 — and set the campaign / harvest year.
5. Fill in the classification you already know: colour, product type, sweetness or style, category and appellation of origin. These fields stay editable afterwards.
6. Save, then open the Intakes tab and click Add intakes. Tick the deliveries that belong to this wine and enter, per row, how many kilos to allocate in Use (kg). You can allocate part of a delivery; the rest stays available for another wine.
7. Choose the intake batch (wave) the deliveries belong to — for example one wave per variety or per delivery day. Waves matter later, because pressing and protocol steps can be filtered per wave.
8. Confirm. WineOS reports how many allocations were added and shows the attached kilos in the tab header.

There is a faster route during harvest: from Harvest → Intakes, tick the deliveries that belong to the same wine and use Create winemaking. The dialog summarises the selection — number of intakes, total kilos, dates, producers, varieties and campaigns — and creates the folder with those intakes already linked.

What WineOS updates

• A winemaking record with its own code appears in the winemaking list, with year, style, category and status, and is counted on the dashboard.
• The allocated kilos become the input for destemming/crushing and, through it, for pressing. Unallocated kilos stay available, so one delivery can be split between wines.
• The winemaking becomes the place where operations, additions, analyses, LOTs, protocol steps, bottling and the cellar book of that wine are recorded.
• If the winemaking follows a protocol, attaching intakes can automatically open the step runs that apply to that wave.

The tabs you will use

A winemaking opens on a tab bar, and each tab is one part of the production record: Summary for identity and key figures, Protocol for the steps and their progress, Intakes for the grapes and their available kilos, Operations for transfers, top-ups, blends and in-place work, Additions with dose, unit and the volume used as the calculation base, Analyses for laboratory results and fermentation logs, Lots for the LOTs created inside the batch, Bottling, Cellar book, Notes and Cost.

Tabs are views over the same batch, so a record created from the Protocol tab appears immediately in its own tab and on the LOT it affects.

Practical example

A 12-tonne Sauvignon Blanc delivery arrives over two days from two growers. You create one winemaking, Sauvignon Blanc PGI 2026, allocate 8,000 kg from day one into wave 1 and 4,000 kg from day two into a separate wave 2. Later, at pressing, you can press each wave into its own tank and still read both under the same wine.
